Shis kebab by Danel Ortega

Shies kebabs are cubes of meat cooked on a skewers.

INGREDIENTS :

·675g/1 1/2 lbs. lamb
·4 tablespoons olive oil
·4 tablespoons lemon juice
·1/2 teaspoon dried or fresh chopped oregano
·a large pinch of salt and of black pepper
· 8 lettuce leaves
·4 tomatoes
·half a cucumber
·1/2 teaspoon dried or fresh rosemary
·8 pitta bread
·8 metal or wooden skewers

PREPARED:

1;Put the lamb on a chopping board and carefully
 use a sharp knit to cut it into cubes about 2 cm (1in) across.

2;Put the olive oil, three tablespoons of lemon juice, the oregano
and salt and pepper into a bowl. Mix them well.

3;Put the meat in the bowl and stir it.
Leave the meat to soak in the oil and lemon mixture for an hour.

4;Wash and dry the lettuce, then cut it into strips.
Slice the cucumber and cut the tomatoes into quarters.

5;Push six cubes of meat onto each skewers, leaving gaps between them.
 Sprinkle them with a title rosemary.

6;Heat the grill and cook the kebabs for 10-20 minutes.
Turn them every so of ten so they are brown all over.

7;Turn the grill down and warm the pitta breads under it quickly.
Then, slice each one along the top.

8;Fill each pitta bread with some salad and the meat from one kebab.
Sprinkle with a little more lemon juice.
