Lebkuchen by Ane Marin

Ingredients:
1 egg
4 tablespoons clear honey
55g butter or margarine
55g soft brown sugar
225g plain flour
1 tablespoon baking powder
2 tablespoons ground ginger
30g cocoa powder
1 tablespoon mixed spice
85g icing sugar
1 tablespoon lemon juice
food colouring (optional) icing bag or a cone of greaseproof peaper
Oven temperature:
200ÂșC gas marc 6

                                                               Steps
First, grease a baking sheet with butter. Separate the egg, put the yolk into a bowl. You don't need the egg white.

Then, turn on the oven. Put the honey, butter and sugar in a pan over a low heat. Stir them until the butter has melted.

Next, sift the flour, baking powder, cocoa powder, ginger and mixed spice into a mixing bowl. Then add the egg yolk.

After that, mix the melted butter, honey and sugar into the flour. Squeeze well the mixture into a ball of dough with your hands.

Then sprinkle some flour on a clean worktop and onto a rolling pin. Roll out the dough until it is 1/2 cm.

Next, use some cookie cutters or a knife to cut some differents shapes.

After that, use a spatula to lift the biscuits onto the baking sheet. Make a hole at the top of each biscuit.

Next, bake the biscuits for seven or eight minutes. Then lift the biscuits to a plate and leave then to cool.

Later, sift the icing sugar into a bowl, mix in the tablespoon of lemon juice. Then stirring very well.

After that, spoon some icing into a smaller bowl, mix in a few drops of food colouring. (If you want).

Finally, when the biscuits are cool, spoon the icing into a icing bag. Pipe on the icing slowly bi squeezing the bag.
