German food is very different from one end of the country to the other.German specialities are sausages and "spatzle" (noodles), thick soups, dumplings and dark rye bread.
Lebkuchen
Lebkuchen are spicy German biscuits for the Christmas time. the biscuits are decorated with different colours and later are hung on the christmas tree. This recipe is for 15 small biscuits.
INGREDIENTS
- 1 egg
- 4 tables poons clear honey
-55g butter or margarine
-55g soft brown sugar
- 225g plain flour
-1 teaspoon baking powder
-2 teaspoons ground ginger
-30g cocoa powder
- 1 teaspoon mixed spice
-85g icing sugar
-1 tablespoon lemon juice food colouring (optional )
- Icing bag or a cone of grease proof paper.
- Oven temperature: 200 Gas mark 6
Making
1. Separate the white egg and the yolk and later put into a bowl.
2. Next, turn on the oven. Put honey butter and sugar in a pan over a low heat Stir Hem unit the butter has melted.
3. Later, sift the flour, baking powder, cocoa powder, ginger and mixed spice into a mixing bowl. Add the egg yolk.
4.After that, mix the melted butter, honey and suger into the flour. Squeete it with hands.
5. Then, prinle some flour into a clean worktop and roll out the dough with a rolling pin until it is 1/2 cm thick.
6. Later, use cookie cutters to cut out the different shapes.
7. Next, lift the biscuits into the baking sheet with a spatule. Make a hole at the top of each biscuits.
8. Later, bake the biscuits for seven to eight minutes, until golden.
9. Meanwhile, sift the iring into the bowl and mix a tablespoon of lemon juice.
10. After that, spoon some of the iring into a smaller bowl. Mix in a few drops of food colouring.
11. Finally, when the biscuits have cooled put the icing on the biscuits.
